This is one of the knives that I make to complete my Carbon Steel Chef knife sets.

The Spec's are;
Steel O1 tool steel Forged to shape with distal taper blade and full tang.
800grit hand sanded blade.
Blade Height 3/4"
Blade max thickness .073" to a needle sharp point.
Blade length to bolster 3 & 3/4"
Overall length 8 & 5/8"
Cocobolo Rosewood handle with Loveless type fasteners.
Nicely Balanced and a Great fit and finish.
Razor Sharp!!!
Comes with a Zippered Case.
!!!!!!!Not Dishwasher Proof.!!!!!!!!!
I use vegetable oil on the blade after hand washing.

You have Asked a Great Question!!!!
Knives that are dishwasher safe are normally Stainless steel and some type of plastic handle.
We own some.
The Benefits of carbon steel blades are that they stay Sharp longer and are Easier to sharpen. But being carbon steel they have to be hand washed and dried after use. Then we oil the blade with vegetable oil and wipe off. The oil is to protect from rust and preserve the patina. A good patina can help protect from rust.

My Goal is to supply many different style carbon steel knives for home and professionally Chef's. This is because the production industry has all but stopped making them.
What got me interested in make them was my first order from a Chef from a culinary school in Rhode Island.

In summary,
People have a choice then if thy want to deal with maintaining a stainless blade by sharpening or with carbon steel by hand washing and oiling.

Ok so you use your knife and hand wash it in the sink...then you put oil on a paper towel and then wipe the blade with the oily paper towel and then put the knife back in the block?
