Chef’s knife, 11.75” overall with a 6.75” cutting edge with a .090” spine.
Handle material; highly figured stabilized Thuya Burl with brass pins.
1095 high carbon steel thermal cycled and quenched in Parks 50 to over 66 Rockwell and tempered back to just over 62 Rockwell. (Test photos below)
Edge ground to a zero edge then sharpened with Japanese Whetstones at 1000, 3000 and 8000 Grit then stropped with Chromium Oxide Paste on leather. Shipped hair shaving sharp.
This is a thin hard sharp great slicer that feels comfortable in the hand!
