We have stock on most of our models and are still shipping Christmas orders! We can get orders to you in time up until about the 19th! If you are close by then as late as the 22nd! If you are in the US pick our faster shipping method when checking out on the website. If you are in Canada you should be ok with standard shipping unless you order last minute. Here are our three kitchen models. All are made by my dad and myself using top quality materials and some automation (cnc milling) to help keep prices down. Both our CNC and satin finishes are shown below but we don't show every combination of blade finish and handle color. So you are saying your santoku are sharpened to 9° per side? That is pretty ambitious for S35VN.

Hi Russ,

I meant to change that. It should say 20° (I edited it now) inclusive (10° per side). Until recently we did the santoku at 18° but changed it to 20°. The S35 seemed to do fine at 18 degrees with light use, which is what it is intended for. Slicing veggies and so on. The reason we changed it is we found the difference in cutting performance between 18° and 20° was negligible. It makes our lives easier to have as few different angles in the lineup as possible.
