Chicken vs Victorinox Pioneer vs hot water

I did 7 chickens today (I lost a bet to an Amish girl).
After I was done, I got a pot of boiling water, put my knife in it for about 5 minutes to un-guk it.
Did you know if you touch a metal knife that just came out of boiling water it will be HOT?

I presume it was an alox model?
 
Garden ones are better anyway
 
Showed this to my wife last night.. She looked at it, then just looked at me and didn't say a word. 🤭
 
Next time you don't have to use boiling water. 165 F for a min or two should do just fine to kill any bugs and be easier on your fingers.
