heres my favorite. first put some oil in pot and add about 1/4 chopped onion,cook it a couple a minutes just before you see the onion begin to brown add 2lbs cheap hamburger like 70%lean. 1/2 lb italian sausage.cook it until brown.then take it off flame and drain off grease.then put back on flame add one can of red kidney beans,1/2 can of sliced jalapenos 2 pakages of mccormack chili sesoning and add hunt tomato sauce with garlic to desired consistancy(i use 1 small can) cook it for a little while then put it in a bowltop with craft shredded mexican style cheese and some sour cream. i will put this against any of those 27 part recipes.

I have a recipie for the spices that I blend together from bulk. ( 3 kinds of Chili powder, fresh garlic, cumin, oregano, ect) with a specific brand and type of tomato sauce, fire roasted tomatoes, and some other stuff. I use chili meat I get from the butcher. This chili is simmered in a crock pot for 8-10 hours, and enjoyed with beer.

Now, if I'm in a hurry, and I want good chili, I use Carroll Shelby's chili mix (Yes, THE Carrol Shelby), ground beef, and tomato sauce. Simmered for 30 minutes, it is almost as good as my homemade.
