Guess I will baby it initially since I ve cheap cleaver for such jobs initially.They are easy to sharpen. They have enough weight where you can cleaver through the bones (NO ITS NOT A BONECUTTER!) with one whack and since they are so stiff they make short time of scaling them big thick scales on fish like this! Makes a mess of the kitchen but a fine knife indeed! Did you miss out on this ntt? I thought you got it?
