Cleaver Handle?????

I was recently asked by a friend to restore an old cleaver for her. She wants a wood handle on it and I was wondering if anyone knows whether it would be better to use a hardwood and oil it or use a really oily wood. I just need to have something that won't absorb water, soap, blood, etc.
Can anyone help?
 
If I were restoring an old cleaver I'd rather put something like hickory or walnut on it rather than an exotic hardwood. Any handle that gets wet is going to need oil once in a while anyhow so why not keep it more traditional to start with? Seal the wood inside and out with some thinned poly varnish to fill the pores, sand and put on a few coats of boiled linseed or tung oil to finish it off. Really just depends on what your friend wants.

Thanks! I'll look into it. I know I've sealed handles with boiled linseed oil before, I just didn't know if I had to do something more.
