Does anyone know about any high quality professional sharpeners in the Cleveland area? I sharpen my own knives, but often don't like the bevels when I receive them. To reproduce them the way I want takes forever on my sharpmaker even with the diamond like rods. I am looking for someone I can take a blade to to reproduce to a specific angle(usually 30 dps.). Any suggestions?

Honestly the only people I would trust is if you could find a genuine knifemaker in your area that does not mind working on other peoples knives. The reason being most "professional" knife sharpeners use methods of sharpening that are counterintuitive to knives in general. I have had several knive absolutely destroyed by these types. If I were you I would either spring for the ken onion work sharp for about $120 or sending your knives via the mail to someone well known and reputable.

Thanks. That's why I'm asking because I once took a bd1/manix somewhere to get a chip out and it was butchered. Not happening again. I had a worksharp and got great results but it fell apart after abiut a year or so. Not sure I wanna pony up for another. But looks like that might end up being the best option...

My worksharp burnt out as well. If you still have it shoot them an email and they may replace it , they did mine

30 degrees per side? That's 60 degrees inclusive...

I think you meant 30 degrees inclusive: You are right, professional local sharpeners not only will ruin the bevel, but will probably ruin the temper as well.

I send them to RazorEdgeKnives. Reprofiles are still powered, but at least his machine is water-cooled. The work itself is amazing.

I often do the reprofile myself (although narrow double edged blades defeat me, so are better sent out), but often the blades will get more help from a thinning re-grind, and he does that amazingly well.

What about Richard J. I dunno if he's still doing it or what's going on its been awhile since I talked to him,but he's a wizard when it comes to sharpening
