You can get a hair shaving edge at basically any angle less than 90 inclusive. There is a difference between cutting ability and edge sharpness, though they are related. Edge angle has a large influence on edge holding, while primary grind geometry has greater influence on cutting ability. Picture a full flat primary grind down to an edge bevel that is 45 degrees per side. It could shave your arm, but not for long.
