COC-7 Chisel Grind vs V-Grind

So im eventually going to get my 1st emerson, looking @ a CQC-7 drilled for lefty. My question is what do most ppl on here prefer? the v grind or the chisel grind and why?
 
I have 2 chisel grind 7s, and one 7V. The chisel's edge is keener and cuts better, however it takes some getting used to if you're right handed.
 
yeah im a lefty so no problems there...now for sharpening, im assuming just the 1 side gets sharpened right?
 
yes all emersons are chisel ground. To sharpen them you drag the blade along the sharpening surface away from the spine, and only away from the spine. After a burr has formed on the reverse side you lay it as flat as possible on your sharpening surface and drag it acros it to remove it. The cqc-7 is the easiest knife i have ever sharpened, i find it very easy to get an insanely sharp edge on it in no time, the same edge takes me an hour to do on any other knife. I personally like to keep two different edges on my CQC-7 as its tanto design allows me to treat each edge like a different blade.

I do all my knives free hand on a synthetic whet stone just FYI.
 
I think people knock chisel grinds just like serrations. No, they may not be for everybody, but they get very sharp, and bite deep. Yes, they tend to pull a little to one side when you're cutting, but most people don't need perfectly straight, long cuts in material that often. Cutting cordage, rope, cardboard, wood, they do great. If you're cutting material for an art project, it may not be perfect, but otherwise you're golden.

They really do nice on waterstones, with a polished edge. You can sharpen them back and forth on the stone, and it will work great. Just sharpen the side with the edge bevel pretty much like you would a regular V edge, and strop the other side on a very fine stone, or strop, or denim, or pretty much anything.
 
If you are lefty a chisel is perfect for you as the flat side is on the correct side for you while using (scraping, shaving pencils ect) you have to cut away from you and a flat ground on the wrong side can make that impossible to accomplish simple chores.


I wish that Emerson would make a right hand Emerson for us righties.

I'm not sure if we are on the same page or not. A true chisel grind leaves one side untouched and then grinds the other side of the blade.

But the OP mentioned a v-grind which is slightly different. A v-ground blade (such as the CQC-7A or the Commander) is symmetrically ground on both sides (for the primary bevel) but then the secondary bevel only appears on one side. With that secondary bevel, you will still get that "skid" off to one side if you attempt to cut something like a piece of paper.

I am glad I saw this my first Emerson is on its way didn't know about the sharpening technique does this hold true for Ceramic stones also ? If so makes sense don't want to start another thread so hope the OP doesn't mind could you guys post some pics of yours and maybe the edge close up? Thanks Rich

Post pics of the chisel edge? You got it! I'll post a Chisel edge with a V-Grind and and a chisel edge with a chisel grind in a bit!

I got the black CF one of the bay and the blue one at a knifemaker site that is in the USA....<--if you catch my drift!

They're cf lamiates though but they're pretty cool, i'd like a green one fo' sho!

7V. The other side resembles the 7 chisel, but ground at a shallower angle. This is how most other Emersons are ground:

I've since then re-profiled the 7V to 30 degrees inclusive, matching (or tried to) both sides:

Thanks puts it in a much better perspective than any online pics I have seen looks like sharpening that edge will be pretty easy. Looking forward to getting mine Emersons I one of the very few brands I havent owned .

Centerness lol, all chisels are like that but this is centered. It is a tiny bit to the left but that's because the lockbar is pushing force.

Centerness again (little to the right but needs to be tightened), notice the grind has a bevel while the left side doesn't. If you're wanting to convert it to a full v-edge. Your going to have to remove a tad bit of metal in order to get it even such as the example given on Gooeytek's 7V.

The sharpening technique is the same for any sharpening stone. As someone said you can go back and forth, but the simplest method, and the only one recommend by emerson is to drag away from the spine of the knife. I say this, yet i go back and forth as it gives you the smoothest, most polished edge the quickest.

What emerson do you have on the way?

Man id be so happy if emerson made a cqc-7 with some belly on it, that'd be such a perfect utility knife. For the most part i hate tantos i believe them to be a marketing ploy, people who like them say they can pry better, have stronger tips, can pierce better. For most tantos this just isnt true, the cqc-7 is the tanto that can do all that. Its a great prying knife, scraper, pryer, not sure about penetrator though. I still think the tanto penetration thing is a myth, ether way its not hard to penetrate a human. The cqc-7 may not be the best slicer because of its blade shape, but due to how quick and easy it is to resharpen, mines always on me crazy sharp.

Excuse the additions I've made, they're just some mods I'm planning for my super 7. I added a small belly to it. Nothing major but I think it looks great like that!
