Considering one of the following:

Hattori HD-10

Tenmi Jyuraku Damascus Series TD-4

Glestain Professional 730-TK

Does anyone have any recommendations of one over the other? Personal experience with any of them?

Thanks for any input.

If only those option I'd pick hattori.

I have not used those brands but hear hattori is decent.

Could you spend more? Pay a little more and you have much more options.

I'm all ears! Any recommendations are much appreciated.

Unless you just have to use 300mm blades, I think you'll find them Too big for every day use. I have 270 & 240 Gyuto's and the 240's see more board time by a wide margin.
I have this one's big brother {270mm } , same steel & profile .

Either one of these, would be great everyday workhorses at a decent price.

I have the 240 Zakuri in Blue #1, it's very easy to sharpen. Good balance = very nimble

If you want them, go for it.
I was just offering options of makers that I have at home & like. And that would run 40 or 50 bucks cheaper

Please don't take it the wrong way. I thought that those were good makers. As mentioned, I have a Masahiro that I LOVE. But would like something a bit more unique.

Misono (which I use daily at work) is a great brand. I use Swedish steel, which stains easily, but is a joy to use.
Masamoto is a very good brand, pricey but well worth it. Near perfect geometry (not just words, use one for 8 hours a day and you'll understand).
Hattori I've only heard about, little complaints.

I personally use Konosuke (another competent brand) and misono.
