Is that a differential-hardening line running straight 1/3" above the edge? (please tell me it's a change in reflection due to sharpening...)

I'm obviously new at this whole thing, but why would you be worried about that being a hardening line? Is it simply too close to the edge?

Yes it would be too close to the edge and the blade might bend wile chopping.
Hardening the the whole blade makes it more like a spring.;)
