contemplating making a knife

Ok I got my wharncliffe profile cut out. Roughly. Like with a little imagination you can tell its supposed to be a knife. I'll be making a trip to harbor freight tomorrow to pick up a vise and im wondering if I should also grab an angle grinder. Ill be using it to grind out my profiles. And then using a hand file to do my bevels.

I'm worrying about heat building up and work hardening my edges . Does anyone else use angle grinders? Or maybe have an alternative suggestion?

I'm a noob at this stuff but my reasoning on the couple of blades I've been working on is: if you dunk it in water and keep it at temperatures that you can handle without gloves while your at the angle or belt grinder you should be alright.

Common Sense Update: don't get your hands near the business end of the angle grinder - while cutting.
 
So this is what I have come up with so far. The finish profiling was all done with hand file and I'm pretty happy with the shape. You can see where I started filing the bevels. I have not drilled holes for pins yet. Comments and critiques welcome
