I'd use it as a work knife in my catering kitchen. it'd be interesting to see how well it performed the tasks that I usually use a small paring knife for.
 
I would carry this knife for one week and use it as my sole EDC. I would document its use in every instance, from kitchen duty to farm use.

Id use it for frog gigin season to cut their legs off, and use it to cut up some catfish nuggets for a nice fry up at the MO bushcrafters gathering coming up.
