These are the handcrafted knives I do,using Dexter USA Blades. They are ss,a 440 variant ,thin stock, thin grinds. They hold an edge OK but the beauty of these is they get a nice toothy edge back & quick. In fact like one or two strokes with one of these ceramic rods ,so what the heck I made like a little set. The knives have vintage natural canvas, cross cut,the " touch up" ceramic rod is a solid piece of the same micarta.
Nickel on the knives pins are peened prior to finishing out. I put a slack belt finish on the spines of the blades so they feel good in hand.
Larger knife is 7-7/8" OAL with 4" of cutting edge This could be considered a parer but I have a lot of people telling me they use them like a mini chef for veggie prep.
The smaller is a parer size 6-7/8" OAL with 3" of cutting edge
The rod is 3/8" in diameter.and 7-3/8" , OAL is 11-1/8"
$150. shipped Paypal preferred but I do take a USPS M.O. too
Feel free to contact me if you have any questions
Thank You,-Vince
