These are the handcrafted knives I do,using Dexter USA Blades. They are ss,a 440 variant ,thin stock,thin grinds. They hold an edge OK but the beauty of these is they get a nice toothy edge back & quick. In fact like one or two strokes with one of these ceramic rods ,so what the heck I made like a little set. The knives have vintage natural canvas,cross cut,the " touch up" ceramic rod is a solid piece of the same micarta.
Nickel on the knives pins are peened prior to finishing out. I put a slack belt finish on the spines of the blades so they feel good in hand.

Larger knife is 7-7/8" OAL with 4" of cutting edge This could be considered a parer but I have a lot of people telling me they use them like a mini chef for veggie prep.

The smaller is a parer size 6-7/8" OAL with 3" of cutting edge

The rod is 3/8" in diameter.and 7-3/8" , OAL is 11-1/8"

Vince , good post we use Dexter USA as well for all our leasing knives for restaurants. You are right the edge retention and rockwell hardness on dexter is definitely on the the lower side but the ease of re-sharping is fantastic.
