K294 is Bohlers vers of CPM 10V (A11)

That is a great video. 320 grit blows my mind, but of course, 10 mil behind the edge says a lot.
 
Impressive! I assume that the real trick is the knife and the sharpening technique, but does the A11 steel improve the tomato cutting somehow?

Yeah it's mostly the knife, the design, geometry etc... :)

The A11 just makes it cut longer, a lot longer.... And it's aggressive..
 
So I had to try it, too. Not even a challenge slicing paper thin tomato slices with Wilson's Punta Chivato knife. Sliced up two garden tomatoes for dinner.

I do love his knives.
