320 will be very toothy and thus will cut food nicely.That is a great video. 320 grit blows my mind, but of course, 10 mil behind the edge says a lot.
Impressive! I assume that the real trick is the knife and the sharpening technique, but does the A11 steel improve the tomato cutting somehow?
I know what I'm trying when I get some tomatoes!
So I had to try it, too. Not even a challenge slicing paper thin tomato slices with Wilson's Punta Chivato knife. Sliced up two garden tomatoes for dinner.
I do love his knives.
