I have an 8" 2x72 Coote Grinder. I recently purchased the knife rest and the small wheel attachment. There is some leeway when mounting the knife rest. I am wondering if the rest should be mounted so that it is in the center of the edge circumference of the contact wheel, or slightly above or below center.

I have the same contact wheel size as you on the coote. don't have a knife rest though ! Should have gotten one and had Norm install it before! BAH!

I would say mount it like the photo so when you want to move the machine back to 90 degrees, it doesn't get stopped by the knife rest ! Give norm coote a call.
 
It will be below center of the wheel no matter what. The whole grinder tilts back to allow you access to it. The knife rest is mounted by only one bolt so you can turn it to accomodate belts of different thicknesses.
