Corned Beef Hash

I suppose it could be, but the stuff I eat generally isn't. My friend who goes elk hunting is friends with a butcher who always does the butchering, curing, sausage making, etc.
 
y'all are makin' my mouth water, one thing you cannot get here for love nor money is a good canned corn beef hash, USA style. i'd love a nice fried patty of cbh with a fried egg on top. the stuff they dare call cbh here is a mush mess and much too liquid. cain't get corn meal flour for corn bread or muffins neither. a primitive country, this UK.
 
Kronckew, I buy about three containers of Corn meal every month. We bread fish with it, Joan makes killer corn bread, and I cook 3 cups of corn meal in boiling water with a little salt (in a bread pan) to make mush to fry up with my eggs and meat in the morning. I fry mush about 5/8 " thick with a little lo cal syrup. After about four days I switch to buckwheat cakes for a few mornings, just to switch up.

What I can't find around here is a restaurant that does a good job on liver and onions.....we had one, but my repeat business wasn't enough to keep the good woman going...she ran out of business!
 
My recipe is to take a couple of good size potatoes and dice down
to smallish cubes.

Dry the potatoes between a terry towel ( lessens the sticking)

Hash brown the potatoes with some chopped up onion. (I use olive oil
in the fry pan).

Add a can of corned beef and my secret ingredient is diced roast pork
added to the mix.

Cook until done add a bit of pakrika.

Serve in a big bowl with lots of ketchup :)

I want to visit your home. You wouldn't notice a extra sleeping bag in the kitchen, would you?
I'm the only one I know who will eat liver and onions.
I dont' want it every day, but once a month? yeah.
Course, I like boiled beets and butter, too.

Oh, Elk is better than Beef. it is not gamey if not ruined in process. It is less fat, and very very delicious.

I'm not sure how Moose and Elk compare.

Thanks for that. I'll give it a try. Roast pork may have to wait, the first time (probably won't have time to do that before the weekend).

Interesting, I never knew that 'hash-brown' was a verb.
 
I meant to get back to this thread w while ago.

Dice two large potatoes, russet preffered.
fry potato's in olive oil and some butter
add in one diced onion, fry until soft
add shredded, or diced corned beef, about one pound

Here's the part where lots of people disagree...
I add about a cup of milk and cook until all the milk is evaporated, about 10 minutes. The milk adds a richness and often people will bake the corned beef has after adding the milk. Milk is used in Bolognese sauce the same way.
Either way this is delicious. Stay away fromt he canned stuff if you can, it's all fat and salt. The homemade stuff is always better, take the time.
We always cook two corned beefs, one for dinner and an extra one for breakfast the next morning!
