A friend brought me an old Briddell cleaver to rehandle and clean up. The scales are glued and it has three, ½ " brass pins. I tried using my heat gun, but not much luck in removing the old handle and pins. Any help or suggestions would be MUCH appreciated.

Drill the pins out and then heat and remove the scales. I think most epoxies release around 175 or 200 degrees. The pins are probably peened so they won't come out unless drilled. Don't overheat the blade or you could lose temper.
 
Put it on the anvil and bash the heck out of the wood.

If it's not glued on, it should split and come away from the rivets.

Then you can deal with the rivets in the open.
 
I usually use a combination of all the above. I give the scales a quick pass on a 36 grit belt to knock any peening off the pins, and then smack the wood with a 3# hammer while laying on the anvil. That usually talks care of the old scales. The pins should pull out or cut off easily. Any epoxy residue can be warmed with a heat gun or torch and scraped off.

A chisel placed in line with the rivets will also split and remove the old scales.
