Could you field dress an elk with a stockman?

I've never done it but I'd say yes I could. I grew up in Western New York where we did allot of deer hunting and the odd black bear. My knife then was a Buck 110. A couple other Guys would use a Wyoming knife and a LG Stockman. I haven't been out in years though and I've never had the thrill of an Elk hunt. At the time I worked in a butcher shop where we had access to Dexter Russell knives. As a group of 4 people we would process 150-200 deer every year. It was quite the happening back then.
 
A slip joint was my knife of choice for years while hunting. Never even considered a fixed blade. I had a Schrade (model? Buck 110 clone) and a trapper pattern slippie that I used while hunting and they did a fine job. I always liked a clip point for field dressing as long as you're careful.

Field dressing would not be a problem with an elk. I would prefer a larger fixed blade for meat processing however. I never "processed" wild game in the field.
