CPM 154 or 3v for deer

Just m'y .02, I have never had any rust issues with my V4E knife, wich is a carbon steel with pretty mich no chromium.

It's a steel close to 3V from composition view, so i'd say that if you dry the blade after use it will nevers rust and at worse (blood..) make a nice nice patina that goes with time :)
 
Yes DLC DOES prevent rusting on steel that is coated with it. It is spreading of misinformation to say otherwise. The degree of protection will depend on the quality of work done at the coating vendor. From pretty good to great.
 
As it has already been said, it doesn't take a special knife to field dress a deer, etc. For quartering, etc. a good bone saw makes the job easy. There are many folding portable bone saws available.

My field knife is a Spyderco Bill Moran drop point model which I have used for many years without any issues. It is light and has a great handle. Here is some info about it that may be of interest.
