CPM 440V or ATS-34

Which holds an edge the best and is a better grade steel?

In my experience, 440V seems to hold an edge better AND to sharpen more easily than ATS34, and I have knives in both. Hence, I prefer 440V.

I have owned several knives of various brands with both ATS-34 and CPM 440V. In my opinion, 440V holds its edge longer. I have also had to modify my sharpening techniques as the burr edge on 440V tend to roll. So I have started using softer strokes with the white sticks. Followed up by steeling and then a leather strop with chromium oxide.

Both are excellent steels. But 440V holds an edge longer and is less likely to rust.
