Here is what I have found. Some steels hold their edge very well but are hard to sharpen. However, I can get a shaving sharp edge on difficult steel by buffing on a hard felt wheel. McMaster-Carr sells hard buffing wheels. I use green buffing compound available from Lee Valley. My buffer is a discarded 1750 RPM motor with a mandrel extension available from Knife making supply edges so its a personal choice. I lean toward steels that take a very sharp shaving houses. I sharpen as usual but buff on the felt wheel. Many seem to prefer coarser egde easily even at the expense of edge holding.
