I just finished up this Sujihiki and am really excited about how it turned out! The steel is CPM CruWear/Z Wear with an in house heat treatment that included a carbide refinement cycle, timed soak at a precise temperature, chilled plates/forced air quench, sub zero "cryo" quench completion and triple tempers for a final hardness of ~63HRC. The grind is basically a full flat grind but has slight convexity to help with food release. It has a hand rubbed satin finish and a balance point right at my maker's mark. The handle is made from a nicely figured piece of walnut, and locks right into my hand with a standard grip! The sharpening progression went from 120, 400, 1000, 2000, 6000, 8000 (DMT EEF diamond plate). This knife is just stupid stupid sharp! The little hairs on my arm went running scared, right into the air!!! Like I said, I am thrilled how it turned out! I am actually making myself a Sujihiki from Ultra Blue (1.2563) and black micarta. I was hoping Ultra Blue could compete with CruWear in edge retention, but it really doesn't. So y'all get the better blade with the cooler handle!
