I do not have any experience with either material. Between this two which is much easier to grind

There is no comparison 3v hands down wins in toughness, edge holding, edge stability. But not corrosion resistance. I do not know about grindability but if that is your only concern I would get 3v because it way out performs d2.

If you grind annealed the difference isn't that much. If you grind after hardening, I notice that 3V takes a bit more time, but it's not unbearable or anything.

They're both great steels, and yes 3V is super tough. I use them both regularly and get requests for both from different customers. They finish about the same when it comes to hand rubbing or belt finishes.

Pre heat treat/annealed the CPM D2 is easier to grind but it's a negligible amount.
Post ht the CPM D2 is noticeably easier to grind. However, I wouldn't let the grindability alone determine my steel choice.

CPM-D2 makes a very good knife. CPM-3V makes a far superior knife.

Like the others said, grindability is not that different, and a very poor way to choose a steel anyway. If you really need fast grind times and are going to work the steel hard, just stick with 420HC.

If you are having your blades HT'ed by a pro like Peter's or Bos (who will keep the blade almost entirely free of decarb), you can take 3V right down to finished dimensions and surface finish before hardening, and just polish off the tempering colors afterwards. Don't believe the hype that "you can't get a decent finish on CPM-3V".
