2 knives for sale this weekend! The first is by far my most favorite kitchen knife made to date. It is basically a "petty" or "utility" knife with a hidden tang construction. The blade steel is made from CPM M4, a very hard and wear resistant steel that is used to win cutting competitions. It has an excellent balance of toughness and wear resistance, due to very small vanadium, tungsten, moly, and chromium carbides. Hardened by Peter's to final Rockwell "C" rating of 64! If you don't particularly care to sharpen your kitchen knives, this is the one for you! The blade has a nice hand-rubbed satin finish, and if anyone has ever tried doing that, you know how CPM M4 laughs at abrasives! The spine AND choil have been rounded and polished. The blade features a full flat grind to a very thin but durable edge. The handle is a beautiful piece of figured mesquite, and was also hand-rubbed and oiled. You can cut fajita meat for a year (at least) and never notice a change in the sharpness. Ask me how I know that. While CPM M4 is not a stainless steel, it will resist corrosion and patina FAR better than your usual high carbon steels. "S Davenport" maker's mark on left side, "CPM M4" steel ID on right side. I have to let this one go. Don't want to, but it needs a new home.

2nd knife is another of my Cru Forge V Hunters. This is a very utilitarian design, and can be used for a lot of cutting chores, not just game processing. It works quite well in the kitchen as a small utility knife due to it's thin full flat grind, as well as EDC tasks. The blade steel is Crucible's Cru Forge V, a high carbon steel alloyed with vanadium to give it great wear resistance. Cru Forge V is my favorite high carbon (low alloy) steel. The heat treat was a very "custom job", and consisted of thermal cycles and a pre-quench to refine the grain, a "sub-zero" quench, and triple tempers. Final hardness is ~64HRC!! Handle is cocobolo, and hand-rubbed to a satin finish. Pins are black micarta. "S Davenport" maker's mark on right side, "CFV" steel ID on left side. This knife is priced to move!
