Thought I'd share a 10 year update on the s125v.
I've made several knives out of s125v.
It is alive and well.
10 years ago there wasn't any access to bonded diamond and CBN stones to really make this steel perform better at the edge.
S125v is superior in my opinion to s110v because it has a higher working hardness and better hardening response rather than reducing for more corrison resistance in s110v.
However, I do enjoy both steels, and will continue use to both.
S125v is the top edge retention stainless in controlled rope cut slicing on 3/4 Manilla rope.
I love the raw aggression at the edge and how it's resistant to being worn blunted and smooth.
My favorite edge so far on s125v is a 400grit Poltava Metallic bonded CBN at 15dps fully deburred on the stone.
This finish I feel really gets those wonderful carbides poking out at the apex yet doesnt leave the ragged finish a DMT does. The finish is more refined with the bonded stones.
Burr breaks off nice with custom HT and processing. I then like to add a 1 um diamond spray on a leather strop to polish the teeth at the edge. Makes an excellent blend of aggression and finesse.
Perfect for processing tough animal hides.
I hope one day
@nsm releases something along the lines is s145v and MPL-1 Supracor.
I feel the community has the knowledge now to use these materials as knives.
