I am looking to buy some CPM-S60V or CPM 440v same stuff.

I have one and it is a cutter. it can be a bear to sharpen if you do not have Diamond sharpener.

According to their website Hawkins Knife Making Supplies has S-60V in 1/8", 5/32" and 3/16" thicknesses.
