Hello,

Please take a look at my latest offerings. This is a 165mm (6.5" ) by 40mm (1.57”) blade from 1/8" thick CPM154CM steel.
Heat Treated By Jarod Todd. RC 62 + Cryo. Very fine edge, superior edge holding over AEBL.

Solid one pc Curly Walnut “WA” Handles made and installed by Graydon Decollibus. I do enjoy collaborating with other makers. I am a fan of Graydon’s work. You wont be disappointed.

The blade has 10" hollow ground fullers and convexed bevels.
The edge itself is a shallow (approx. 10 deg.) micro-bevel, finished on a Shapton pro 7k stone and stropped on a 10K stone.


As always, The blade has a full length distal taper.

This type of bevel geometry is commonly referred to as an "S" grind. I think it absolutely looks and feels cool, plus it does reduce "stickiness" at least a little bit. The spine and choil is chamferred.

The oversize 1/8” stock thickness combined with the full length distal taper gives this knife a solid, authoritative feel in hand. This knife works great and you will love it, I guarantee it.

Does anyone want to see more pictures or a cutting demonstration? I can add some more content to this sale thread tomorrow.
 
I intended to actually sharpen one up and use it on a meal, didnt happen though, just a quick clip for now. If anyone wants one of these with one of my western handles let me know, I have a couple more on deck, waiting to pick handle materials.

For many of my customers this is the only chef knife they need/use. It is a GREAT all around Petty. Your satisfaction is guaranteed.

Thanks guys, I have been making this pattern for 6 years now, about 30 have been completed. these are the first version in the .140" thick cpm154, I really like this thickness for an all around , the heel is pretty rugged for a kitchen knife, while the distal taper allows top notch performance for the rest of the blade. Also heads up, 4 more cpm154 blades on deck that will get western shape handles, I have also some lower price point .09" thick 15n20 versions as well as one more .09" thick M390 blade.
 
Pretty close to what I'm in the market for.. just about 3 weeks too soon. Great lookers.

I stilll have these two available, I also have a couple ready for handle install and a wide variety of handle materials to choose from. Just lmk
