cpm154 edge stability at high hardness?

I was thinking of heat treating some cpm154(kitchen knives) to a hardness of about 62-63..I was wondering about the edge stability at that hardness? Is chipping an issue with bone contact? Not chopping bone, mind you but general kitchen work..Thanks
 
I'm not an expert but cpm 154 is a great blade material for kitchen knives. 62 HRC in my opinion is good hardness for this Grade. It will hold a great edge ground to about .005 behind the edge. It shouldn't chip out if care is taken around bones.
 
I take folder blades to 61Rc with .005 behind edge and have had good results.

I have had cpm154 hardened to 60 by Paul Bos Heat treating and once you get it sharpened (wear resistant, takes a while by hand even on diamond stones) holds the edge beautifully
