Hey guys I've got a gyuto up for sale tonight. It's 0.10" CPM154 steel that I handled with with an exhibition grade piece of Koa. The bolsters are African blackwood. The liner is black paper micarta and the pins are copper corby bolts. I took the edge down to 0.09" before sharpening. There is a slight distal taper so the spine retains some rigidity making this a good all around slicer. The balance point is just in front of the ricasso and the bolster is tapered to facilitate a pinch grip.
Specs:
OAL: 13.25" (336mm)
Blade: 8.75" (220mm) , Full flat grind hand sanded to 600 grit, 0.09" edge before sharpening, 2" heel height,
Steel: 0.10" thickness at ricasso CPM154, HT by Peter's HT to RC60
Handle: Curly Koa stabilized by K&G with copper corby bolts, African Blackwood bolsters with mosaic pins. Black paper micarta liners.
Spine and finger choil rounded.

Have admired your work for awhile now, would love to have one of your kitchen knives soon especially when ground so thin. I will keep a eye out for something a little shorter around 7". Best Martin

Thanks Martin! Funny that you should be looking for a shorter one...I just epoxied the handles on my version of a honesuki that has a 6.75" blade, CPM154 steel, Curly Black Olive that I got from John Doyle here on BF with East Indian Ebony bolsters. Should be ready early this week. Maybe it will catch your eye.
