Well, the first important thing is you have a controllable oven right?
So this is what I do based on lots of posts here found by searching a bit. Very happy with the results on 4 or 5 knives done with CPM 154 in my oven so far.

Wrap knives in stainless 309 foil and double seam
1400 for 15 min
1950 for 30 min
Plate quench to room temp (Between two big slabs of aluminum)
Remove knives from foil
Soak in Dry Ice/Alcohol bath for half hour
400 degree temper 2 hours
quench in water to room temp
400 again 2 hours
quench in water to room temp

Good luck! I find it pretty easy/routine to do at home once you get it down (and have the equipment!)

I use alot of CPM154. My procedure with my Equipment.
Wrap in foil
1250F for 15 min.
1650F for 15 min.
1980F for 30 min.
Plate quench to room temp
Into LN overnight
Temper 435 F 2 hours Water Quench
Temper 435 F 2 hours Water Quench
60.5 to 61 Rc

I do not interrupt my H/T process from start to finish.

I just bought an evenheat oven. Before I was just doing O1 with coal forge but now want to do some stainless.
For plate quench do you take it right out of oven and leave the foil on? Clamp pressure on plates? Got pics of that setup?
 
I don't clamp but my plates are large, 12"X12"X 2" Aluminum, yes straight out of the oven and in between plates with foil on.
 
Both heat treat schedules look excellent... be sure to cryo or sub zero as mentioned for maximum conversion.

Apply pressure to the plates if they are on the lighter side for full contact, I use a weight or just apply pressure by hand.

I'd leave in the foil at first, be sure to check for creases or anything that could potentially warp your blade. I sometimes cut them out but that is more for folders that I need really straight... dangerous for sure. I like the EMT style scissors to cut the foil, they work nicely with gloves on too.

My plates are 2x4x18 and I use a clamp on both ends- no idea if it is critical to clamp but my blades have been nice and straight!
 
Cryo vs Sub-zero . Cryo permits the formation of eta carbides and will give you an extra 1-2 HRc points and a more wear resistant edge . That's over the sub-zero !
