I have been reading about cpm 110v and cpm 125v lately. Is it really worth the money over cpm35vn and N690 which I use and have good results with. From what I understand it's hard to work and finish but get superb results.

They don't sound like they are cost-effective for most types of use, IMO. If you really don't like sharpening knives then I guess they would have some appeal, and they will be trendy among those who like expensive knives and designer steels, but my guess is that they will have a limited following for the time being, and the price will lean them towards collectors rather than users. The knife market has seen so many new super-alloys emerge over the last decade or so, that the technology is well ahead of the needs of the average user, IMO.

I think if the design and use of the knife are geared towards slicing and thin edges then yes these steels are worth the extra cash. They will definitely not be suited for a large or hard use blade. Both will be quite a lot more difficult to grind before and after HT. finishing will be very tough.

I've not used 125V, but have solid experiences with 110v. I consider 110v to be quite superior to 90v, it can be run harder and is not as chippy in my experience.
