That was an excellent job of restoration.

I have used Watco Danish Oil followed by a single coat of Watco poly- in satin.

You can get any effect that you want, with variations in the number of coats of sealer and finish.
If you have some poly on the surface, it will thoroughly seal the wood and should be very resistant to water, as Dan said.
