r8shell and afishhunter mention two good reasons for carrying multiple knives, size and blade profile. Another is blade thickness. Any knife with a blade about twice as long as the thickness of your steak will work on meat, but cutting something harder like cheese or fruit is easier with a thin blade. My Case peanut is almost as thin as a Victorinox paring knife, which is handy for quartering and coring an apple. Just for grins I mic'd the following for reference:
Wire cheese slicer 0.018"
Victorinox paring 0.046"
Case Peanut 0.050"
Buck 303 clip 0.072"

I usually carry a modern one hand opener on my left front jeans pocket, being a southpaw, and a Wenger Pocket Tool Chest in the right front pocket with my keys. That's a fourth reason for multiple knives, extra tools. The scissors and nail file, which is also an emergency tiny Philips screwdriver, staple remover, watch back remover, shoe tread rock remover, etc. are handy extra tools besides the 1.75" long, 0.0435" blade. Not to mention the cap lifter/flat head screwdriver, sewing awl, and eyeglass screwdriver also included. And yes, I have quartered and cored many an apple with the blade.

But what if that then leaves you with only one knife?


I typically only carry one, but if I have my keys then I also have a Rambler.
 
I've been pocketing these three knives every morning now, for months. And between them, 5 actual knife blades, among other implements.

I've been carrying a Peanut since 1991 in the Navy.
For heavy duty stuff I use(d) my Buck 307 (which I got as a birthday gift in 1984).
My girlfriend is still laughing at me that I'm still not used to the extra weight of the Buck 303.
With 3 blades (or 2 for the Peanut), if you know what you want or need to do, the solution will present itself.
