Anyone know how this alloy (CrMoV alloy) compares with other blade steels?
Or is there some site I can read up on?

There are a number of CrMoV blade alloys, do you have any more detail. You need a specific description like 8C13CrMov.

Furi knife uses this steel and my wife asked me about. It's from the Rachal Ray FoodNetwork show she says.
