This knife I am very proud to offer to you! And in my favorite carbon steel...by far! The MIGHTY Cru Forge V!!!!! This fantastic steel actually has enough carbon AND vanadium in it to form primary vanadium carbides! And all in a very fine aus grain microstructure. This translates to a long lasting edge, both in apex stability and wear resistance (and a blade that is very difficult to finish by hand!). The edge on this knife was sharpened with Atoma and DMT diamond plates, followed by a final run on the Spyderco fine ceramice stone. The idea being to form a very precise apex, and possibley cut any vanadium carbides into submission. The edge can be described as "toothy but polished". I laid the end of my finger open on it while testing after just medium grit!!! The edge was initially taken to apex at 20 degrees total (10 per side), then the shoulder was blended in with the primary bevel, and then re-sharpened to about 26 total (13 per side). And since the steel was left hard......this should be a very nice performer in the kitchen!
