Hello fellow knife nerds! I have a new Verde Ranch Hunter and a few reposts to offer this weekend.

Knife # 1 Verde Ranch Hunter (CFV)

The steel in this bad boy is Crucible's Cru Forge V, and I am getting low on my supply! When it's gone, that's it. Crucible, sadly, no longer produces Cru Forge V, which is a real shame. It has great performance for such a simple steel. The heat treatment is dialed in and I use a DET anneal process prior to the quench. At 63HRC, it is plenty hard and plenty tough and has excellent edge retention. I always noticed a bit of carbide banding in CFV, and this blade was no exception. The blade has been lightly etched in order to reveal that pattern a bit better. It's always interested me how the banding follows the belly of the blade. I think it does this because after the knife was profiled and as it underwent normalizing, cycling, annealing, and the soak at hardening temp, those carbides move around in the matrix, and follow the profile of the blade. I have a theory that if the blade was NOT profiled prior to all the heat treatments (as in heat treating a rectangular piece of steel), and then if the blade was profiled afterwards (you wouldn't do it this way), those carbides would not follow the belly of the edge, they would just be straight lines. I don't know for sure, but it looks pretty cool! The grind is a thin full flat grind and the handle is black/gray g10 with red liners which feels great in the hand. Knife # 2

I had forgotten to repost this knife last time, I wasn't about to let that happen again! I LOVE this thing. It is a large kitchen utility/chef's knife with a very comfortable handle and rounded/polished spine. The steel is one of the hottest steels out there at the moment, PM Z Wear (also known as CPM CruWear). If you're familiar with 3V, and add more carbon, you get Z Wear! It is essentially as tough as 3V, but with better wear resistance and edge retention. This is one of those steels that really excels in everything from a pocket knife to a machete! The heat treatment is top of the line including a "cryo" soak to "complete the quench" and triple tempers. Final hardness is 63HRC. The grind is a full flat grind that terminates in a thin edge for a very pleasurable slicing ability. The handle is claro walnut with a black g10 bolster and slight "D" shave favoring the right hand. If you're left handed, no worries because it feels great either way. I also really like the edge that Z Wear takes. I used diamond plates from 220, 325, 600, 1200, and "8000" mesh and even with that level of refinement, the edge still has a lot of "bite" to it. It will push cut and slice cut like a champ. Use this thing on wooden cutting boards, and you will rarely have to actually resharpen the blade. Grab you a ceramic butcher's rod, and that's all you will need to maintain the edge for a LONG time. Knife # 3 Santoku

his design is very handy in the kitchen. Mrs. Davenport uses her AEBL Santoku daily for just about everything food prep related. The blade steel in this Santoku is the "relatively" new Crucible CPM S45VN that has a few tweaks over the very popular S30V and S35VN series of steels. I won't bore with details, but there is a nitrogen and niobium addition in S45VN that increases the "stainless" ability as well as make this steel tougher without sacrificing wear resistance. The heat treatment included a "cryo" bath to complete the quench as well as triple tempers. The hardness is at 63HRC, perfect for a knife like a Santoku. The blade has a full flat grind that terminates in a very thin edge. If you check out my IG feed (stuartalandavenport), you'll find a video that I posted which shows this knife slicing through printer paper before I even sharpened it. The cut made in the video is straight off of the hand polish, which is a nice satin finish, btw. The handle is claro walnut and was hand rubbed with an oil finish, and then a final coat of wax for extra protection. This is a superb combination of elements....a very versatile blade shape, an excellent steel paired with a top quality heat treatment, and a great feeling handle. I think you'll find yourself grabbing this knife from the block about 95% of the time you're in the kitchen....whether you need to cut something or not! Plastic edge protector included.

Knife # 4 Verde Ranch Hunter (52100)

I redesigned my classic hunter to offer slightly more blade length and a small integrated guard to keep the fingers from being bit by the heel of the edge. It also has an aluminum lanyard tube for those that like to use them. The handle is black and gray g10, which looks pretty cool after it is shaped. The blade is a classic drop point with a full flat grind and thin edge geometry for better cutting. The steel is 52100, a high carbon steel that is known for its use in ball bearing production as well as custom knives. The heat treatment, as always, is top notch with normalizing, thermal cycling, DET anneal, soak at the proper temperature with a digitally controlled oven, fast oil quench, sub zero "cryo", and triple tempers. Hardness is ~63HRC with an extremely fine grain structure and small even carbide dispersion. I love holding this thing as it feels really good in the hand with various grips. I never enjoyed processing deer, to me it's always work, but worth it when it's all said and done! This knife comes with a simple kydex sheath as well.
