seriously though, do you think a liability minded modern corporation would risk using a toxic coating on something they know might be used to prepare game?

It may be "safe", whatever that means, but it flakes continuously all over whatever is cut and I just can not go with it in the kitchen.

Most coating will do this to some extent, especially if they start to rust. You can work around it by giving it a quick brush and wipre down before you do the kitchen work.
