Current King of Edge Retention?

It depends is the best answer that I can give due to the variables.

In general in quality production blades with like geometry it will generally be S90V > M4 > M390.

Can't go wrong with any of those steels though as they all do very well and in real use it could be hard to tell the difference between them.

M390?? I thought K390 was the big dog right now
 
It's CPM S-125-V, but nobody has any.

Elliot over at Ferrum Forge has done a few knife runs in the steel, but yeah, in general, there is hardly any of this stuff on the market...for good reason.
It is one of the absolute hardest steels to machine, grind, and sharpen. It completely destroys equipment when you are making a knife with it.

Yeah, it's really something to deal with overall, there are quite a few things that need to be taken into count before even thinking about making a knife in S125V.

No kidding. I hear Fantoni did a special run of one of their knives in it for KnifeArt. Haven't heard anything about how they came out, but just the difference in price between that run and their normal version of the same model should speak a lot about the issues with S125V.
It literally almost doubled the cost of the knife.

It's the worst steel to deal with that there is stainless wise, but it makes a nice blade once it's all done.
