Hey pros, I'm hoping someone can help me out. I've never dealt with custom knife making before, but I'm really interested in having a custom boning knife made for me. I haven't found a production or even a custom for sale that I like and here's why. I work at a meat market and this is what I've come to know and love:

Forschner, I think 5", upswept, thin, pointy tip, and I guess semi-flexible. But of course, the steel is awful. Dulls halfway through breaking down a chicken. I love the blade shape and am very comfortable with it after 8 years, but if I could commission someone to build me a similar style knife with a better steel it would be pretty awesome. I'm not positive what steel I'd want, however. I've read 3V is a great choice as it holds up to bones well, but I'd prefer something at least semi-stainless or perhaps laminated. Something with a little flex, but not filet knife flex. S35VN? Some other tool steel? I dunno, you tell me.
So yeah, if anyone out there is interested in working with me on this, let me know. Thanks!
