Custom Boning Knife Wanted

Hey pros, I'm hoping someone can help me out. I've never dealt with custom knife making before, but I'm really interested in having a custom boning knife made for me. I haven't found a production or even a custom for sale that I like and here's why. I work at a meat market and this is what I've come to know and love:

Forschner, I think 5", upswept, thin, pointy tip, and I guess semi-flexible. But of course, the steel is awful. Dulls halfway through breaking down a chicken. I love the blade shape and am very comfortable with it after 8 years, but if I could commission someone to build me a similar style knife with a better steel it would be pretty awesome. I'm not positive what steel I'd want, however. I've read 3V is a great choice as it holds up to bones well, but I'd prefer something at least semi-stainless or perhaps laminated. Something with a little flex, but not filet knife flex. S35VN? Some other tool steel? I dunno, you tell me.

I'm working on a run of blades with almost that same shape (6" cutting edge) in ELMAX, AEB-L, & S35VN right now. If things don't work out with Chris let me know, I may have an extra one left over.

I'm working one out with Chris, but if you're making this anyway...I have many pocket knives, can't hurt to have more than one boning knife! Especially if it's different in size. I'll send an email. This is fun!
