Custom Chef's Knife

Hey guys, I just posted a mesage on the general thread, and I'm looking for a custom maker to make me a 10" or larger chef's knife in a German shape. This would be a working knife as I am a professional chef. I want something unique yet highly functional. Do any custom makers make anything other than paring knives? These look great, but the true worker in the kitchen is the chef's or "French" knife. I have been using a Wustoff Grand Prix for about three years now, and it's been great, but I want something special. I love all knives and it seems strange that my most interesting ones are my folders- not the one I have in my hand six hours a day. If anyone can help me, please let me know.

Hello Joe,

I am currently making a 9" chef's knife in ATS34 for an order, as well as a chinese style cleaver. The Chef's knife is a sort of integral style knife ground from 1/4" stock. The blade distally tapers from 3/16" to less than 1/16" at the tip, and the full tang is tapered for balance. Give me a day or so and I will post a scan of the incomplete blade. Contact Timothy Wright at 520-282-4180 (Sedona, AZ). One of his specialties is Kitchen Knives - I own (and use daily) 6 of them. I've had them since 1984 and they still can pop hair! He also makes high end folders (his forte) and sheath knives.

This is the chef's knife I currently have in process. The blade is 8 inches long (not nine as per my previous post, a little over 13" OAL, and 1.8" wide at the widest.
