This probably should be posted in the Kitchen Knives subforum, but I can only post it in one or the other, and the Fixed Blade section gets more traffic. Anyways...
This week I have a very special knife to offer, one I am excited about! Thought about keeping it, but I have a few already. It is a large kitchen utility knife in D2 tool steel. If you know D2, it loves to cut meat! The relatively large carbides in the steel act like micro serrations that just shred into protein. And to that end, I left the edge at around 600 mesh (DMT), and very lightly polished the apex. It is a wicked cutting machine. And if you know D2 even more, not all D2 is the same, in chemical composition and in heat treatment. This D2 was sourced from Alpha Knife Supply, and the heat treatment has been modified for cutlery (instead of "industry standard" to make molds and dies). I also included a "prequench", which greatly refines the grain structure, thus adding a little bit more toughness. The carbide structure is not changed, just the aus grain. And I just want to reiterate, this is NOT CPM D2, rather ingot D2. I haven't used CPM D2, but those who have used it tend to prefer the regular ingot D2 for kitchen cutlery, because of those large carbides acting like micro serrations. After the prequench, plate/forced-air quench, extended "cryo" quench, and triple tempers, the hardness falls right at 63HRC. The grind is full flat, tapered to tip, and the blade was given a hand rubbed satin finish. The handle is nicely figured Claro Walnut, and was also hand rubbed and pores filled, much like high dollar gun stocks. This is a sweet and aggressive cutting knife that has a LOT of edge retention. Whether you're a line cook, chef, or home pro, this knife will fit well in your culinary cache! (And you can put the sharpening stones away for a while!)
