The grindability of both steels is low but that isn't a factor if the knives are ground to suitable geometries. The main issue with these steels is regards to ease of sharpening is not getting them soft as then it can be difficult to form a crisp edge as removing a burr is difficult if the steel is soft and hard to grind. Ease of sharpening in general is more about the geometry than the steel unless you have really extreme viewpoints on what sharpness means and/or profile to really fine edges. In which case S30V has advantages over D2 in both respects.
