I do the banana thing with a knife. I think the only "unusual" thing I do with a knife (often my SAK) is dig out weeds in my yard. I tend to remove a few just about every time I wander around the yard, especially dang violets which are next to impossible to control with herbicides. If I'm thinking about it before hand, I'll use my Condor Bushlore as I'm less concerned about edge damage on it. But I don't wear it on my belt except when I'm working in the field. So, it often is not handy.
Never used a knife to cut open a banana—I prefer the meat bruised, smashed, then fried, if possible. I’ve seen apes eat the entire banana, skin and all. Slicing a steak, however does take a clean and sharp knife to cut properly, and I often prefer my pocketknife over low end/serrated restaurant cutlery.
