Hi all,
I've got a good sized Alabama Damascus Gyuto up for sale tonight. It's got a great ladder type pattern to it that etched well I think. The handle is stabilized Spalted Maple Burl that came from Shelton Pacific. They have WSSI stabilize most of there stuff.
The balance point is just in front of the handle and the scales are beveled to facilitate a pinch grip.
The steel is thin (0.076") and the blade was compound ground with the top 1/2 flat and the bottom convex. For this reason there's not a lot of distal taper which helped retain some rigidity compared to one that's full flat and distally tapered.
Specs:
OAL: 13.5" (340mm)
Blade: 8.8" (220mm) long, compound grind, 2" heel height, 0.007" edge before sharpening, spine and choil are rounded.
Steel: 0.076" Alabama Damascus, HT by Peter's to RC60
Handle: Stabilized Spalted Maple Burl, Black paper micarta liners, Black micarta pins and copper mosaics.
Case: Padded zippered case included.
