Good afternoon friends. I love making chef knives. A friend and local customer has asked me to make more of this model for him. So we are looking at a potential run of chef knives in AEB-L at 63 HRC which would be expected by Spring 2027 (perhaps sooner).
This is the Samurai Pierre, which I named for is blending of both French and Japanese characteristics in one knife. With a cutting edge just over 9" and 14 1/8" overall, this beast of a kitchen knife can do just about anything you want it to. I am also strongly considering running two versions.
a .094" stock version for those who may want to get a sheath made for it as well, and toss it in the gear bag when heading out the door to camp, hunt, fish, hike, or BBQ. They will both be run at 63 HRC, but the latter version can be given more robust edge geometry to handle harder use if so desired, or, of course, ground super thin for those who would use it exclusively in the safety of their kitchens.
Blade finish will be fine Scotchbrite belt satin.
Here is the updated CAD file of the design, and you will note a plethora of pin positions to allow maximal fartsing of the artsing on the handle for those wanting to splurge. The handle is also larger, and angled higher to allow greater knuckle clearance for my distant Sasquatchian cousins.
Base price for this knife is $365 and will include natural wood handle scales from a selection of what I have in stock, affixed by the front and rear pin position, and FedEx Ground Shipping.
Handle upgrades will be available, which can include liners, additional pins, mosaic pins, colored pins, segmented handle scales with stabilized wood, G10, carbon fiber, Micarta, Suretouch, Ameragrip, GripX, etc., you get the idea. There is no set price for an upgraded handle, as that will be determined individually.
Black Boltaron taco sheaths (possibly other colors as well, such as OD green and Coyote brown since I have to order more sheath material soon) will be $65 for either version.
I typically take deposits equal to 30% of base price up front for pre-orders like this to help cover start up costs, with balance due on completion.
