not sure if you were talking about an AK Bowie (or the cleaver?), but I just did some food prep a few minutes ago, cut up a watermelon with my AK Bowie. That was fun!

Anyone who does own one should do some cooking and food prep with one. I own three other cleavers, one very heavy one, but none of them cut like the HI AK Cleaver does. How about mincing carrots without noticing any effort?

I have seen a bunch of Gelbus, but don't think we have ever seen one that light. Most are a bit heavier. I think it's a great length/weight combo for a really useful blade shape. Looks pretty too.

Carrots, how about beef ribs or T-Bones? Mine can split a whole chicken in to quarters with two blows. Make sure you have a thick cutting board.
They are great, BIG, HEAVY and sharp.

I have always just called mine "Munk Cleaver" when I emailed Yangdu (when they first started talking about one), I ask for a Munk Cleaver and it showed up, a few weeks later. Mine is perfectly straight accross the bottom and about 44 oz.

My Crow is awesome! I still want a Bullet Bowie/Munk Chunk though. Crow will then be weapon/tool and the BB will be tool/weapon, in that order.

440z!!!:eek: Wow, Dick! Mine came in at 33oz and I thought that was the slightly heavy.

If anyone does not know what the Munk Chunk looks like, here is a very grainy side by side with the standard AK bowie. The AK bowie was my favored blade for several years. However, with the modification of form to create the Munk Chunk it was no longer the best short chopper of the bunch. Furthermore, as I was able to gain speed and technique with the Rose, I found it would out perform the AK bowie on many things. All is not lost for my wonderful AK bowie. I gave it to my father to keep in his truck. He loves it:)

I was afraid to use my Rose on anything. It was...well, kind of daintily pretty. I didn't want to hurt her. :rolleyes:
 
I guess I have the first one- weighs 32 ounces. Sogguy's is then an astonishing 12 ounces more. I'll have to see if the chicken trick will work with such a runt.

For mincing dicing etc I push the forward tip down and rock back; just like a paper cutter. Because of the balance, I do not notice any fatigue. I realize of course that 'fatigue' is relative. I have a Chinese cleaver weighing 30 ounces, Gunter Welhelm, much broader blade which can be rocked easily from both ends. But it does not do as well. Conceivably faster, though I've never diced for speed.

When you cut a carrot there is a point where the blade breaks through and accelerates with the sudden loss of resistance. It goes crunch, or crack; When the AK Cleaver goes through there is no crunch, just a munch; how about that? The hand does not notice any sudden vibration at all. No shook as the blade hits the cutting board. That's what I mean about fatigue. The HI cleaver is the smoothest.

The carrot and the stick; and it's a big stick.

Why hasn't anyone jumped on that GS? Are you trying to cause trouble between me and my wife? If you are, you're getting very close to succeeding.

The only thing holding me back is the handle material. I've never seen a knife with an evergreen handle before. That should mean that it's a soft wood, right?

That's what I was wondering. The GS is about #10 on my list, so I won't be solving any marital problems you may or may not have, but I'd be interested to hear if anyone has insight on that question.
