I'll just add my voice to the choir asking for a high-end steel shallot, and to reiterate that if you could run up a stainless damascus / fancy inlay or engraved handle version, I'd definetly lay down the money for it.

...I love the looks of the Shallot but my big ol' "meat-hooks" are so calloused up and rough, it's really hard to hang onto the ti handles...I'd love to see some G10 like svrider3 mentioned...the "rough" stuff......Damascus and S30V would be nice too...,,,
