I'm really glad you all have enjoyed these. My oldest son (14) has developed a new tick-borne allergy to all mammal meat. (Alpha-gal allergy)
That's why we have been focused on poultry and fish. I've been doing more with duck: seared breasts, duck sausage, roast duck, and soon, duck confit.

If there's interest, we could video some of that kind of stuff. I haven't met a duck hunter around here that really knows what to do with one after he shoots it.
